First, how do you know you are comparing the "same" bean? Are you sure it's from the same farm as a lot and regular?
 

Decaf processing has been good, but it still basically involves dissolving the bean a little, washing caffeine and then drying the bean back to its original moisture content. It is impossible to choose and only remove the caffeine and leave everything else intact. Other compounds in the beans are inevitably lost or altered in a way that changes the taste.

Another issue with decaf is that it sells slower and will put on the shelf longer. It's harder to get a new bag with decaf. I have fried Decaf fresh and got a pleasant surprise. I agree, it's not as good as usual, but it can be good.

Decaf coffee can taste as good as regular coffee. However, the caffeination process is a processing step that costs money and adds to the marginal cost of the coffee you buy. Since most people do not want to pay "extra" (ie "more than regular coffee") for decaf, corners are cut elsewhere.

What this generally means is that decaf coffee will be produced from green coffee of lower quality than ordinary coffee from the same burner or packer. If you want to make a cup of coffee as good as regular coffee, then you must be willing to pay a little more for it than you would for comparable regular coffee.

I have never bought any roasted decaf that was good enough to drink. BUT, COFFEE coffee CAN taste very good.

I know this because I am a homemade bread and I learned how to roast coffee with coffee and coffee for a friend who only drinks caffeine. Now that I can have good spoiled stuff, I can drink coffee late at night. The real key is to start with high-quality arabica-caffeinated coffee. Decafs

The main thing about roasted decaf coffee is that you have to be gentle. For most non-discarded coffees, I fry them fairly quickly. On average, I fried (on Hottop) after approx. 10 minutes. But I fried the decaf much slower and it usually takes 12 to 13 minutes. I try to fry up to the 2nd crack but no further.
